plantain && strawberry vegan pancakes.

I don't know about you, but I loooove plantains! Maybe you've seen them at the grovery store next to the bananas and wondered what the heck those weird lookin' bananas are or how to cook them.. or maybe they've been a favorite of yours for a while now. I usually fry them up with powdered sugar on top! Either way, I've never eaten them with pancakes before, and Nathan had never had them. We decided to incorporate them into yummy pancakes (&& the strawberry makes it so much more yummy, too!!♥.)
All you need to do is get some extra virgin olive oil and fry them in a pan until they are slightly golden like the photo above. We put some almond milk and the majority of the plantains in a blender and blended them up to add to our pancake mix (totally vegan!) with strawberries. It was a VERY wonderful morning, to say the least♥.
HERE ARE THE RESULTS:
 OH! And we made an almond milk, mixed fruit, blueberry smoothie, too!

and p.p.s. THIS is what he showed up with at my door this morning. Vegan German chocolate cupcake. OHMAI. He is quickly becoming my favorite ever! Off to work, now!

I've never tried them, but you make them sound absolutely delicious, so I suppose I better head to the store and get some! Anything in pancake form is usually a win, for me. Haha.
